Dutch Baby Pancakes

1 large apple
4 T butter
2 T. sugar
1/4 t. ground cinnamon
1/2 c. milk
2 large eggs
1/2 t. vanilla
1/4 c. flour
1/4 t. salt
confectioner's sugar
pure maple syrup

Preheat oven 425 degrees

1.  Peel, and slice apple 1/8 thick.  Melt 3 T. butter in cast iron skillet.  Add apples, 1 T. sugar and cinnamon.  Sauté the apples for 5 to 7 minutes. Spread the apples out on bottom of pan

2.  Melt remaining butter and whisk together milk, eggs, butter and vanilla.  Combine also the flour, remaining T. sugar, and salt.  Whisk the flour mixture into the milk mixture, whisking away all lumps.  Pour batter over cooked apple in the hot pan and immediately place in oven.

3.  Bake about 12 to 15 min.  Dust lightly with sifted confectioners sugar and cut in wedges.  Serve with maple sytrup.  

Oatmeal Low Fat Pancakes

1 c. oatmeal
2 applies (grated)
2 eggs
150 g. yogurt
1/2 c. flour
1 t. baking powder
1 t. cinnamon

Put in blender.  Place on grill and cook.  


Gingerbread Pancakek Mix

   Gingerbread Pancake Mix

            6 C. whole wheat flour                       2 t. ground cinnamon
2 T + 2 t. baking powder                    1 c. dry milk (could be buttermilk)
4 t. ground ginger                                ¾ c. brown sugar
2 c. white flour                                    ½ t. salt                                   

Whisk all above ingredients together.  To make pancakes – mix the following:

                                    1 ½ cups Gingerbread Pancake Mix
                                    1 egg or 2 T. freeze-dried eggs
                                    1 T. oil
                                    3/4 c. water                              

Bake on hot griddle until bubbles form on top.  Turn pancake and brown on opposite side.  Enjoy the magic of the Christmas season.  To serve try one of the following from Nauvoo Mercantile  

Ginger Molasses Maple Syrup -        ½ c. maple syrup
 (from Nauvoo Mercantile)                  1 – 1 ½ molasses (to taste)
                                                              ½ - 1 t. ground ginger (to taste)
Combine all syrup ingredients in a small bowl or serving pitcher and whisk until smooth.  Warm syrup mixture in microwave for about 30 seconds if desired.  Pour over pancakes.  Extra syrup will keep airtight in the refrigerator for many months.

Lemon Syrup -          ½ c. sugar                                1 c. cold water
                                    1 T. cornstarch                        2 T. butter, melted
                                     pinch ground nutmeg             2 T. lemon juice (or freeze dried)
                                                                                    ½ t. grated lemon zest
Combine the sugar, cornstarch, and nutmeg in a saucepan.  Stir in water until smooth.  Bring to boil; cook and stir 1-2 min. or until thickened. Remove from heat; stir in butter, lemon juice & zest.

Pumpkin Pancakes

Ingredients

  • 2 cups of Classic Pancake mix
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 1 1/2 teaspoon of pumpkin spice seasoning
  • 6 tablespoons of brown sugar, packed
  • 1 teaspoon of vanilla
  • 2 eggs
  • 2/3 cup of pumpkin puree
  • 1 1/2 cups of buttermilk
  • 3 tablespoons of oil

Directions

  1. Preheat your griddle. 
  2. In a medium-sized bowl, combine the pancake mix, baking powder, baking soda, salt, pumpkin spice seasoning, and brown sugar. 
  3. Stir until well incorporated. 
  4. In a separate bowl, combine the vanilla, eggs, pumpkin puree, buttermilk, and oil and whisk until well combined. 
  5. Stir together the wet and dry ingredients until slightly lumpy. 
  6. Pour pancake batter (about ¼ cup of batter for each pancake) onto the pan.
  7. Cook pancake for 10 minutes at 350 degrees on a griddle (medium-high heat on the stovetop) or until the bottom is browned, then flip and cook for another 5 minutes
  8. Serve warm, topped with the syrup of your choice, and enjoy!
