Roasted Vegetables

● 1 (15-ounce) can chickpeasTop of Form

● 1 pound medium carrots

● 1 large red onion

● 3 tablespoons extra-virgin olive oil

● 2 tablespoons harissa plus more for serving

● 2 teaspoons honey

● 1 teaspoon kosher salt plus more

● 1 (8-ounce) block feta cheese

● ½ plain full-fat Greek yogurt

● Zest and juice from ½ lemon

● Handful of fresh soft herbs, such as parsley, dill, cilantro, basil or a mix

● Handful of toasted nuts, or ¼ cup toasted seeds

Instructions

1. Preheat the oven to 425 degrees Fahrenheit.

2. Dump the chickpeas into a colander. Drain them but do not rinse.

3. Arrange a few layers of paper towels on a rimmed baking sheet, then pour the drained chickpeas on top. Use another paper towel to pat them dry. Discard all the paper towels, then shake the chickpeas into an even layer. There will be some chickpea skins on the baking sheet now — no need to pick them out. They’ll roast up into crispy little bits and be delicious.

4. Cut the carrots on the diagonal into ½-inch-thick slabs and thinly slice the onion. Add the carrots, onion, olive oil, harissa, honey and 1 teaspoon salt to the chickpeas and toss to coat well.

5. Roast until the carrots are golden on the outside but fork-tender, 25 to 30 minutes.

6. Meanwhile, in a blender or food processer, combine the feta and yogurt. Zest and juice the lemon into the blender and add a pinch of salt. Blend on high speed until smooth, scraping down the sides as needed, 30 to 45 seconds. If it’s too thick and your blender is having a hard time mixing, add a bit of water, a splash at a time, until the desired consistency is achieved.

7. Chop the herbs and nuts.

8. Remove the roasted veggies from the oven and transfer to a cooling rack. Taste the veggies and add more salt as needed. Stir in the herbs.

9. Spread a nice spoonful of whipped feta over the bottom of a bowl or plate and top it with a pile of roasted veggies and a sprinkle of nuts. Add another dollop of harissa on top if you love spice.

Shortcut: Skip the whipped feta and just crumble some feta on top. Find pre-chopped butternut squash or sweet potatoes at the grocery store and use them instead of carrots.

Pesto alternative: Omit the harissa and honey, and instead toss a big spoonful of store-bought pesto into the veggies after they have roasted. Serve with burrata instead of whipped feta.

Cheese Soup adapted by Jen A.

2 T. unsalted butter
8 oz. diced onions
8 oz. diced carrots
8 oz. diced celery
salt
3 T. flour
1-quart chicken broth
1 T. minced garlic
1 c. heavy cream
8 oz. Monterey jack cheese
1 t. Worcestershire sauce
1/2 t. hot sauce
1/2 t. white pepper

Melt butter in large heavy-bottomed soup pot over medium heat.  Add onion, carrot, celery and salt.  Sweat for 5 to 10 minutes or until the veges begin to soften, stirring occasionally.  Add the flour and stir consistently for 2 to 3 minutes.

Gradually add chicken stock and bring to boil.  Stir periodically, and reduce heat to low.  Add garlic and cover and simmer about 30 minutes.

Turn off the heat, add the heavy cream and puree with an immersion blender or in a conventional blender.  Gradually add cheese, 1 small handful at a time and stir until melted before adding next handful.  Stir in the Worcestershire sauce, hot sauce, and white pepper.  Taste and add additional seasonings if needed.  If it has cooled down too much return to heat and warm through.

BE careful if you are using a blender and allow soup to cool at least 5 minutes and fill no more than 1/2 full.  Place a towel over the little hole in the top of the blender to let heat escape.  Pulse a few times and then eventually process on high speed until smooth.

Saurkraut from Sister Peterson

Begin with one 2-lb bag of sauerkraut (I believe it is I the cold case near bacon)

Drain off about half the liquid (save in case you want to make it more sour at the end)

1 large carrot, grated
1 clove of garlic, minced
1/2 a onion, chopped
1 t. dill weed (not seed)
1 T. caraway seeds

Combine these ingredients in a pot and fill with water, just to the top of the sauerkraut.

Simmer for about an hour.

Peel and grate one large potato.  Add to sauerkraut.  This is what thickens it.

1/2 pound bacon, cut in small pieces and fried.  Add to sauerkraut (including the fat)

It always tastes better the second day, so you can make it ahead and refrigerate it until used.  Reheat.

Tian -- Parmesan

Parmesan Vegetable Tian

Yield: Makes 4-5 side dish servings

Ingredients:

Nonstick cooking spray
1 tablespoon olive oil, plus more for drizzling
1 large yellow onion, small diced
2 garlic cloves, minced
1 medium zucchini, thinly sliced
1 medium yellow squash, thinly sliced
1 medium baking potato, thinly sliced
2 medium Roma tomatoes, thinly sliced
Heaping 1/4 teaspoon Italian seasoning
Salt and freshly cracked pepper, to taste
1/4 cup shredded mozzarella cheese
2 Tablespoons freshly grated Parmesan

Directions:

Preheat oven to 400 degrees F. Lightly coat a round pie pan with nonstick cooking spray. Set aside.
In a medium pan, heat olive oil. Once hot, add chopped onion and garlic, cooking until soft and fragrant, 5-7 minutes. Spread the onion and garlic mixture on the bottom of pan. Evenly arrange the sliced vegetables on top, alternating as you go. Once you get all the way around, continue layering to fill the middle until no open space remains.

Drizzle all over with 1 Tablespoon olive oil and sprinkle with Italian seasoning, salt and pepper. Cover with aluminum foil and bake covered for 30 minutes.

Remove aluminum foil and sprinkle with mozzarella and Parmesan. Return to oven and bake uncovered for an additional 15 minutes, or until cheese is golden brown.
Enjoy!
TIPS
The vegetables should be sliced into 1/8”-thick rounds. You can use a mandolin, just make sure the blade thickness is 1/8”, otherwise you may end up with too-thin slices.
Try to layer vegetable slices of the same diameter with each other, as this makes layering easier.

Begin today, "If ye are prepared, ye shall not fear." D&C 38:30

Getting prepared can seem like a daunting task, but it doesn't need to be. You can only eat an elephant a bite at a time. Let's start now, evaluate where you are, formulate a plan and begin doing something.

During Emergencies -- tune to 1700 AM, Issaquah's new Radio Station

During an emergency, Issaquah's city and public-safety officials will post messages to 1700 A.M. In adition, 1700 AM will automatically swtich from its programming to the NOAA alert when necessary. Preset your radio to remember. Please keep a battery-powered radio available at all times, as well as extra batteries. In an emergency, you can also find info on:
Web site: http://www.ci.issaquah.wa.us/ (if your computer works) -- ICTV Channel 21
Emergency Information Line: 425-837-3028
