Stir Fry with Hamburger


Savory and Flavorful Mediterranean Ground Beef Stir Fry with Colorful Vegetables
Ingredients:
1 pound ground beef
2 tablespoons olive oil
1 onion, finely chopped
3 cloves garlic, minced
1 red bell pepper, thinly sliced
1 zucchini, cut into half-moons
1 cup cherry tomatoes, halved

Shepherd’s Pie

Ingredients

Potato Layer:

  • 3 medium russet potatoes, peeled and chopped (about 4-5 cups)
  • 2 tablespoons butter
  • ½ - 1 cup milk
  • ½ cup Parmesan cheese
  • ½ cup shredded sharp cheddar cheese
  • Salt and pepper
  • 1 teaspoon garlic powder
  • 1 egg yolk

Meat Filling:

  • 2 - 2 ½ pounds ground beef, turkey, lamb, or sausage (or a combination of any)
  • 1 cup chopped onion
  • 2 large carrots chopped small, about 1 cup
  • 2 cloves garlic, finely pressed
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 3 tablespoons flour
  • 1 tablespoon tomato paste
  • 1 ¼ cups low-sodium beef or chicken broth
  • 1 teaspoon worcestershire sauce
  • ¼ teaspoon dried oregano
  • ¼ teaspoon dried thyme, or 1 teaspoon fresh
  • ¼ teaspoon dried rosemary, or 1 teaspoon fresh
  • ½ cup frozen corn kernels
  • ½ cup frozen peas
  • 1 cup shredded sharp cheddar cheese

Instructions 

  • Preheat the oven to 375 degrees F. Lightly grease a 9X13-inch pan with cooking spray (I've also used a slightly smaller ceramic casserole dish with good results, too, just makes the layers slightly thicker).
  • Place the potatoes in a medium saucepan and cover with 1-2 inches of water. Add a teaspoon of salt. Bring to a boil and cook for 15 minutes or so (it will depend on how large or small the potatoes are cut) until the potatoes are tender.
  • Drain the potatoes and return to the pot. Mash the potatoes lightly. Add the butter, milk (start with 1/2 cup and add more if needed), Parmesan and cheddar cheeses, salt and pepper to taste, and garlic powder. Mash together until smooth and creamy. Stir in the egg yolk until combined.
  • For the meat and vegetable mixture, in a large 12-inch nonstick skillet over medium heat, add the ground meat, onion, carrots, garlic, salt and pepper. Cook, breaking the meat into small pieces, until the meat is no longer pink and the vegetables are starting to soften, 5-7 minutes or so. Drain any excess grease from the mixture.
  • Sprinkle the flour over the meat and cook over medium to medium-high heat for a minute or so, stirring constantly. Stir in the tomato paste, broth, Worcestershire sauce, oregano, thyme, and rosemary. Bring to a simmer and continue to simmer gently for 10 minutes.
  • Stir in the corn and peas.
  • Pour the meat mixture into the prepared pan. Spread the mashed potatoes over the top all the way to the edges of the pan creating a seal over the meat mixture. Sprinkle the 1 cup cheddar over the top of the potatoes.
  • Bake for 35-40 minutes until the edges are golden and the casserole is bubbling. Let it rest out of the oven for 10 minutes before serving.

Notes

Multi-Tasking: the ingredient list looks daunting but I promise this all comes together quickly. While the potatoes are boiling, I start the meat and vegetable mixture - multi-tasking is your friend.
Meat: you can use a variety of different ground meats here. I've made this once with just ground turkey and another time with a combination of ground beef and sausage. Yum! Danielle, who sent me the recipe, uses ground lamb and sausage which would also be delicious (ground lamb is a bit hard to find where I live).

Hamburger Steaks (Much like Grandma Ludwig's meatballs)

A classic, easy-to-make dish featuring delicious hamburger steaks dipped in beef and onion broth. Traditionally served with potatoes or hot white rice. Ingredients : 1lb. ground beef 1 egg 1/3 cup bread crumbs 1/2tsp. black pepper 1 tsp. salt 1/2 tsp. onion powder 1 clove garlic minced 1tsp. Worcestershire sauce 1tbsp. oil 1 1/2 cup thinly sliced onion 2tbsp. all-purpose flour 1 cup beef broth 1/2tsp. salt Instructions: In a large bowl, combine ground beef, eggs, breadcrumbs, pepper, salt, onion powder, garlic and Worcestershire sauce, and form to thick patties. Heat the oil in a large pan over medium heat. Fry the steaks and onions in the oil until well browned. Transfer the steaks to a plate and leave them hot. Sprinkle the flour over the onions and broth in the pan. Stir in the flour with a fork, scraping the meat off the bottom while stirring. Gradually mix in the meat broth. Season with seasoned salt. Simmer, stirring, over medium-low heat for 5 minutes, until broth thickens. Reduce the heat, return the steaks to the broth, cover, and simmer for another 15 minutes. When finished, serve with potato puree or vegetables of your choice.

Pioneer Soup (Danish)

 

"Quick Danish Soup

1 lb. ground beef

1 qt. water

2 tb chicken soup base

1 tb. beef soup base

1 qt. water [error?]

6 carrots, diced

4 potatoes diced

1 onion chopped

2 stalks celery sliced

1 8 oz can tomato sauce

2 tb parsley minced

1 tsp salt

1 ts. M.S.G. accent

1/4 ts. pepper

 

Drop crumbled raw meat into 1 qt. lightly boiling water, seasoned with chicken base & beef base. Cook 10 minutes (or until meat is brown). Cool skim off fat. Add 1 more qt. water, vegetables, tomato sauce & seasonings. Cook just until vegetables are tender. (still firm) Add water to taste. Reheat yield 12 servings."

 

We tried it for the 24th of July Pioneer Celebration.  It was good!

Hamburger -- Rice Balls (Lola Ludwig)

From Grandma Ludwig

1 pound hamburger

1 Onion

1 egg

1/2 c. rice (uncooked)

Mix above ingredients together

Season with salt, pepper, and Worcestershire sauce


Roll in balls and cook in 1 can tomato soup and 3 cans of water.  Cook slowly for about one hour!

Favorite Hamburger For the Grill

  • 2 pounds ground chuck
  • ½ cup crushed saltine crackers or Panko breadcrumbs
  • 1 large egg
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons milk
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon black pepper

Instructions

  • Set out a large mixing bowl. Add in the ground beef, crushed crackers, egg, Worcestershire sauce, milk, salt, garlic powder, onion powder, and pepper. Mix by hand until the meat mixture is very smooth.
  • Press the meat down in the bowl, into an even disk. Use a knife to cut and divide the hamburger patty mixture into 6 - 1/3 pound grill or skillet patties, or 12 thin griddle patties.
  • Set out a baking sheet, lined with wax paper or foil, to hold the patties. One at a time, gather the patty mix and press firmly into patties. Shape them just slightly larger than the buns you plan to use, to account for shrinkage during cooking. Set the patties on the baking sheet. Use a spoon to press a dent in the center of each patty so they don't puff up as they cook. If you need to stack the patties separate them with a sheet of wax paper.
  • Preheat the grill or a skillet to medium heat. (Approximately 350-400 degrees F.)
  • For thick patties: Grill or fry the patties for 3-4 minutes per side.
  • For thin patties: Cook on the griddle for 2 minutes per side.
  • Stack the hot patties on hamburgers buns, and top with your favorite hamburgers toppings. Serve warm.

Notes

Homemade hamburger patties will keep well tightly wrapped in plastic wrap or in an airtight container in the fridge for up to 3 days, or in the freezer for up to 3 months.
